Cormòns, in the beating heart of Collio

Friuli is a land of great whites, especially in the Collio DOC area, in the northern hilly area of ​​the province of Gorizia. A borderland as beautiful and fascinating as an ancient Central European Lady, guardian of that typical food and wine trait of the gateway to the East, which we find both in the wines and in the dishes.
The wine tourist will find himself in a land made up of ancient villages, cycling routes and wine routes, especially in Cormòns, in the center of the Collio, where the winery of the same name is located.

Friulano is among its most iconic wines, a white that enchants with its bright straw yellow with golden blades, and which on the nose expresses itself on an intense texture of yellow citrus fruits, which gives way to nectarine, flax and fresh almond. The sip is full-bodied, elegant, with good freshness and flavor, mitigated by softness.
The other great wines of the cellar are Pinot Grigio, Ribolla Gialla, Sauvignon, Pinot Noir, Merlot and Cabernet Franc, just to name a few.

Cjarsons

Ingredients: 100 g smoked Taipana ricotta, 1 kg of cooked and mashed potatoes, 250 g flour, 1 egg yolk, 1 whole egg, 100 g spinach, 305 g pine nuts, 30 g raisins, 80 g butter, cinnamon, salt and pepper. Preparation: mix the potato paste with flour, egg yolk, egg and salt. Roll out the dough,
then create 5 cm circles with the stencil. For the filling, mix spinach, raisins, pine nuts, cinnamon, salt and pepper. Place the filling in the center of the circles, which will be closed in a pyramid on three sides. Cook in boiling, salted water. Sauté them in a pan with a knob of butter and plenty of Taipana smoked ricotta.
